Man Kicks Atkins Corpse in the Junk, Plans to Eat Only Potatoes for 60 Days

Chris Voigt, the head of the Washington State Potato Commission, is tired of his beloved spuds being the Rodney Dangerfield of the vegetable world. To prove that potatoes aren't bad for you, he plans to eat nothin' but spuds for 60 days straight. Before you get excited about how potentially (or potassiumly, amirite guys?) delicious that sounds, Voight went out of his way to point out that he won't add anything to the potatoes other than seasonings, spices and oil. That means sayonara to bacon, cheese, dips, sour cream, and bacon. (It's the potato accessory so nice, I had to list it twice.)

According to the blog Voigt put together to chronicle his potato-munching journey, he started the challenge on October 1st and plans to stop on November 29th, meaning kids need to avoid his house on Halloween if they don't want to score a plain baked potato instead of fun-size Snickers. Also, eating potatoes on Thanksgiving without smothering them in turkey gravy or drenching them in butter is downright un-American.

Voigt is planning to eat 20 potatoes a day and so far is on 4, so by the end of the day today he should be 80 potatoes deep into potentially 1,200 consumed spuds. No word on whether he's going to go for a little diversity and chow down on fingerlings, purple potatoes, sweet potatoes, etc., or if he's just going to rock the Russet like a boss.

What do you think, is it healthy to eat nothing but potatoes for two months? Aside from the fact that he'll clearly get tired of eating the same thing day in and day out, I'm wondering what are the health implications of such a monotonous diet (the fiber alone makes me worry for the durability of his plumbing).
